Strawberry Panna Cotta

Strawberry Panna Cotta

Servings: 2

Prep Time: 5 minutes

Cook Time: 10 minutes

Passive Time: 3 hours


Ingredients (per serving)

  • 1 cup heavy cream

  • 2 tablespoons sugar

  • ¼ teaspoon vanilla bean paste (or ¼ vanilla bean)

  • 1 ¼ teaspoon unflavored gelatin

  • 1 tablespoon water

  • 3-4 fresh strawberries

  • 1 teaspoon sugar


Directions

  1. In a medium sauce pan, combine the cream and sugar. Bring the mixture just to a simmer over moderate heat.

  2. Meanwhile, in a small bowl, sprinkle the gelatin over the water and let stand until evenly moistened, about 5 minutes.

  3. Remove the cream mixture from the heat and stir in vanilla.

  4. Add the gelatin and stir until dissolved.

  5. Pour the panna cotta mixture evenly into ramekins or heat-proof containers, and let cool to room temperature.

  6. Cover with plastic wrap and refrigerate until the panna cotta is set but still jiggly, at least 3 hours.

  7. While the panna cotta is setting, chop the berries, sprinkle with sugar, stir to coat and refrigerate until ready to serve the panna cotta.

  8. Distribute sugared berries over each serving of panna cotta. Garnish with whipped cream and mint leaves (optional)
