Ingredients (per serving)

  • 1 Cup romaine lettuce, roughly chopped

  • 1/2 small Roma tomatoes, quartered

  • 1 Tablespoon red onion, thinly sliced

  • 1 Tablespoon carrots, shredded

  • 4 individual black olives, whole

  • 2 Tablespoon parmesan, grated

  • 4 individual croutons

  • 2 individual pepperoncinis, whole

  • 1/4 Teaspoons Italian seasoning

  • 2 Tablespoons extra virgin olive oil

  • 2 Teaspoons white vinegar

  • 2 Teaspoons water

  • 1/4 Teaspoon dijon mustard

  • 1/4 Tablespoon mayo

  • 1 Pinch sugar

  • 1 Pinch garlic powder

  • 1 Pinch kosher salt

  • 1 Pinch black pepper


Directions

  1. In a large bowl toss together lettuce, tomatoes, carrots, onions, and olives. Top with parmesan, croutons, and pepperoncinis.

  2. Combine all dressing ingredients (Italian seasoning, olive oil, vinegar, water, mustard, mayo, sugar, garlic powder, salt and pepper) in a jar and shake vigorously to blend.

  3. Drizzle with dressing, croutons and more black pepper just before serving. Add baked chicken or fish for added protein (optional).
