Mandarin Chicken Salad

Ingredients (per serving)

  • 1 Cup iceberg lettuce, chopped or shredded

  • 1/4 Cup red cabbage, shredded

  • 4 Ounces chicken breast, fully cooked

  • 6 individual mandarin orange slices

  • 3 Tablespoon crunchy noodles

  • 2 Tablespoon carrot, shredded

  • 1 individual green onion, chopped

  • 2 Tablespoon fresh almonds, sliced

  • 1 Tablespoon rice wine vinegar

  • 2 Teaspoon honey

  • 1 Teaspoon sesame oil

  • 1 Teaspoon hoisin sauce

  • 1 Teaspoon soy sauce

  • 1 Teaspoon ginger, grated

  • 1 Teaspoon garlic, minced

  • 2 Tablespoon vegetable oil


Directions

  1. In a large bowl, toss together lettuce, red cabbage, chicken, mandarin oranges, crushed ramen noodles, carrots, green onions, and sliced almonds.

  2. In a small bowl, whisk together vinegar, honey, sesame oil, hoisin sauce, soy sauce, ginger, and garlic. Slowly drizzle in vegetable oil, whisking constantly until emulsified.

  3. Before serving, drizzle dressing over salad and toss to combine.
