Herb Seared Salmon

Herb Seared Salmon

Servings: 1

Prep Time: 5 minutes

Cook Time: 15 minutes


Ingredients (per serving)

  • 2 sprig(s) fresh thyme

  • 2 sprig(s) Italian parsley

  • 1 sprig(s) fresh rosemary

  • 1 individual green onion

  • 1 individual garlic clove

  • 2 Tablespoons extra virgin olive oil

  • 6 Ounce salmon filet

  • 1 pinch kosher salt

  • 1 pinch black pepper

  • 1 Cup broccolini

Directions

Prep:

1. Finely chop the fresh herbs (thyme, parsley, rosemary and green onion).

2. Grate or finely mince garlic

3. In a small bowl, blend herbs and garlic with 1 TBSP olive oil

4. Trim broccolini stalks and remove leaves


Instructions:

  1. In a small sauce pan, bring 2 cups of water to a boil.

  2. In a medium skillet, warm 1 tablespoon of olive oil over medium heat, until the oil is just smoking. Place the salmon filet in the skillet, skin-side down. Brush the flesh side liberally with herb oil mixture and season with salt and pepper to taste. Sautee skin-side for 2-3 minutes.

  3. Add broccolini to boiling water and boil for 5-6 minutes until stalks are fork tender. Drain and season with salt and pepper.

  4. Using a spatula, carefully turn the salmon. Use tongs or a fork to remove the skin and discard. Brush with remaining herb oil mixture and season with salt and pepper to taste. Sear until just browning and turn once again to sear the skin-side. Cook until it reaches desired doneness.

  5. Serve with broccolini over freshly cooked pasta, if desired.
