Simple Chinese Omelet

Simple Chinese Omelet

Ingredients (per serving)

  • 2 large eggs

  • 1. Tablespoons soy sauce

  • 2 Tablespoons water

  • 1 pinch sesame seeds

  • 2. Teaspoons sesame oil

  • 2 cilantro sprig(s)

  • 2 individual green onion


Directions

  1. Beat eggs, soy sauce and water until fully combined and frothy.

  2. Warm a medium nonstick skillet over medium low heat. Add sesame seeds to the pan to toast for 1-2 minutes. Remove from the skillet, set aside and return the skillet to the heat.

  3. Add sesame oil to the skillet and warm for 1-2 minutes.

  4. Add the scrambled egg mixture, and stir rigorously using chopsticks or a spatula.

  5. Stir the eggs only until they begin to firm up. Then, using the handle, pick up the skillet and rotate the remaining wet eggs until the entire skillet is covered evenly.

  6. Once the eggs are dry to the touch on the upside, add the chopped cilantro and gently roll closed as you plate each omelet.

  7. Finish with sliced green onion and toasted sesame seeds (optional).
