Breakfast Fried Rice

Breakfast Fried Rice

Servings: 1

Prep Time: 5 minutes

Cook Time: 20 minutes


Ingredients (per serving)

  • 1/2 Cup water

  • 1/4 Cup rice, uncooked

  • 2 bacon slices

  • 1 large egg

  • 1/4 small yellow onion, diced

  • 2 Tablespoons peas, frozen

  • 1 individual green onion

  • 1 Tablespoon soy sauce, divided


Directions

  1. Bring water and rice to a boil in a saucepan (or follow rice cooking instructions for 1/2 cup cooked rice per serving). Reduce heat to medium-low, cover, and simmer until rice is tender and liquid is absorbed, 15-20 minutes.

  2. Place bacon in a large skillet and cook over medium-high heat, occasionally turning, until evenly browned, about 10 minutes. Transfer bacon slices to a paper towel-lined plate to drain and crumble at least one into bite-size pieces; reserve the rendered bacon fat in the skillet.

  3. Add yellow onion and cook and stir until yellow onion is translucent, about 5 minutes.

  4. Add green onion and 1 1/2 teaspoons soy sauce (per serving) to the skillet.

  5. Reduce heat to low; stir in rice, crumbled bacon, and remaining soy sauce until well-combined and heated through, 1 to 3 minutes. Remove mixture from skillet and plate.

  6.  Prepare egg in the skillet over low heat until slightly set, 1 to 3 minutes. Serve on top of rice with the remaining bacon slice.
