Shrimp Lo Mein

Ingredients (per serving)
1/2 Cup Lo Mein noodles
2 Teaspoons soy sauce
2 Teaspoon sed chili sauce
1 Teaspoon brown sugar
2 Tablespoon extra virgin olive oil
1/4 small yellow onion
1 Teaspoon garlic, minced
1 small carrot, peeled and grated
1/4 Cup broccoli
6 Ounces shrimp, raw
1/2 Teaspoon Kosher salt
Directions
In a saucepan of boiling water, cook noodles per packet instructions. Drain and rinse with cold water and rub 1 teaspoon of oil all over the noodles. Set aside.
Whisk together soy sauce, hot chili sauce, and brown sugar. Set aside.
Heat 1 tablespoon (per serving) oil in a wok over medium heat. Add white onions, sauté for 3-4 minutes until translucent. Add minced garlic and warm up to 1-minute or until fragrant.
Add carrots and broccoli, cook, stir frequently, until tender, 3-5 minutes.
Remove cooked vegetables from wok and return to the heat. Increase temperature to medium-high and add 1 tablespoon (per serving) of oil.
When oil is glistening hot, add the shrimp, stirring until completely cooked through, 4-6 minutes. Season with salt.
Add cooked veggies back into the wok. Stir in cooked noodles and soy sauce mixture, and gently toss to combine. Serve immediately.
