Shrimp Lo Mein

Shrimp Lo Mein

Ingredients (per serving)

  • 1/2 Cup Lo Mein noodles

  • 2 Teaspoons soy sauce

  • 2 Teaspoon sed chili sauce

  • 1 Teaspoon brown sugar

  • 2 Tablespoon extra virgin olive oil

  • 1/4 small yellow onion

  • 1 Teaspoon garlic, minced

  • 1 small carrot, peeled and grated

  • 1/4 Cup broccoli

  • 6 Ounces shrimp, raw

  • 1/2 Teaspoon Kosher salt


Directions

  1. In a saucepan of boiling water, cook noodles per packet instructions. Drain and rinse with cold water and rub 1 teaspoon of oil all over the noodles. Set aside.

  2. Whisk together soy sauce, hot chili sauce, and brown sugar. Set aside.

  3. Heat 1 tablespoon (per serving) oil in a wok over medium heat. Add white onions, sauté for 3-4 minutes until translucent. Add minced garlic and warm up to 1-minute or until fragrant.

  4. Add carrots and broccoli, cook, stir frequently, until tender, 3-5 minutes.

  5. Remove cooked vegetables from wok and return to the heat. Increase temperature to medium-high and add 1 tablespoon (per serving) of oil.

  6. When oil is glistening hot, add the shrimp, stirring until completely cooked through, 4-6 minutes. Season with salt.

  7. Add cooked veggies back into the wok. Stir in cooked noodles and soy sauce mixture, and gently toss to combine. Serve immediately.
